As far as I know the SLD spec simply forgot to cover this use case
(among others). So... right now there is no way.

An existing workaround is to setup an output transparent color for
mosaics, that work, but it's a mosaic construction time parameter.
Of course you can always make a singe tile mosaic.
Would be nice to have the same parameter in other coverage stores
as well, thought having a way in SLD would be more general and
more flexible I guess.

In any case, work needs to be done to get there
