When I do mvn dependency:tree on my project with geotools 2.6.6, I have
no dependency on xerces:
[INFO] +- org.geotools:gt-main:jar:2.6.6:compile
[INFO] |  +- org.geotools:gt-api:jar:2.6.6:compile
[INFO] |  +- com.vividsolutions:jts:jar:1.10:compile
[INFO] |  +- jdom:jdom:jar:1.0:compile
[INFO] |  \- commons-beanutils:commons-beanutils:jar:1.7.0:compile

With 2.7.0, I have the following one:
[INFO] +- org.geotools:gt-main:jar:2.7.0:compile
[INFO] |  +- org.geotools:gt-api:jar:2.7.0:compile
[INFO] |  +- com.vividsolutions:jts:jar:1.11:compile
[INFO] |  |  \- xerces:xercesImpl:jar:2.4.0:compile
[INFO] |  \- jdom:jdom:jar:1.0:compile

In my project, I don't use the whole geotools just:
