While Micheal is indeed a nice guy and very helpful (and can point out some of
the methods involved) it would be great if you could assemble a working example
that we can add to the docs (so Micheal or yourself can refer to it next time
someone asks).

Although I did not just start with GeoTools; the way in which rasters are used
is a bit of a mystery to me (and the docs are not very clear). I would
recommend looking at test cases in geotools; and providing the link for any
interesting one here on the user list so we can talk about what it is doing and
try and figure out what it all means :-)
