A simple feature is flat, has no sub-features, no multi-valued attributes,
no collections. Each attribute is a primivite (string, date, number,
or a geometry).

Parsing XML based on a schema you get to know only at runtime, and
with the complexity
of the GML one, is actually a hard problem for many people.
If you believe you can manage it I'd suggest you have a look at the
xsd modules in Geotools
and provide patches to enable them buillding collection of Feature
instead of SimpleFeature,
as well as handling sub-features, collections, multiplicity and polymorphism
