welcome to the flat earth society. Its a ruddy nightmare living near the 
180 line. There would appear to be an inner circle of hell for those 
unlucky enough to be working on this where you trip on the problem at 
every step in software. For a lot of work, we use custom or offbeat 
tools that can do it (eg use 0-360 geometry in GMT) but have to do 
workarounds in your situation. So for polygons across the 180 that would 
be working with in say Geoserver, I believe you have to do has you say, 
split on the 180. I havent got multipolygon to work (though havent tried 
since probably v8) - I used two polygons with same attributes. I also 
create two line objects for the border - if you style the polygon with a 
border then get an unsightly line down the 180. You have to be very 
careful with fill too to make it look seamless. Ideally, software would 
understand that the world is round. Second best would be to make it 
switchable between -180-180 and 0-360.
