Chase and catch is part of the mating ritual. If she runs then stops and
raises her behind, she is being receptive.

They have a hoarding instinct and will bury food they don't need
straight away.
If you like you can scatter food, or you can try fixing the bowl to a
piece of wood to raise it up. Using a mug can also work. Either way,
gerbils will try and bury their food n will normally only eat what they
need straight away.
