Our gerbil Big would "purr" when held and patted around the ears. He was
quite tame. The purring seemed in fact to consist of a little throat noise
and also a peaceful grinding of teeth, which I have noticed gerb engaging in
when they are preparing to sleep. I suppose this grinding could be quite
loud?

I believe they do. Sometimes when I have one of mine on my shoulder or arm
I can feel a vibration coming from them. It usually happens when they are
excited. Happy-excited, not nervous-excited. Never loud enough to hear
though, hers must be especially vocal!
