A 10 gallon is a good size for two gerbils but if you have one bigger
they
love the room. Yes you should cover the tank with a tank top or make
one yourself out of hardware cloth.

They can drink from a bowl but it is very messy. They will probably use
it for a toilet and the bowl will have bedding in it. A water bottle is
best
for sanitary reason.
