You could have a faulty washer, or no washer at all (the washer fell out of
the top of one of my water bottles when I was filling it.....didn't realize
it till the bottle was back in the cage leaking over everything and I'd
taken the bottle out to figure out what was wrong.  Found it in the sink
drain)  You can get a new washer at your local hardware store.  Take one
with you to compare sizes.  It's not a normal washer size.

Also the top, or bottle itself could have a tiny crack or puncture of some
kind, that you won't even be able to see. (especially if your gerbs like to
chew around the top) This will cause the bottle to drip water because it's
then not sealed as it's designed to be. If you have extra bottles, switch
tops and bottoms and see if this solves it.  If neither thing is the
problem, you need a new bottle.  You can buy or make bottle guards that
prevent your gerbils chewing the tops.

Also, is it alright for them to go
>overnight without water?  Should I put some veggies in with them in

It's not great....I'd certainly put some apple, celery, lettuce or other
high water content fruit or veggie in with them till you solve it.
