Personally, I think it's a personality thing. I have an agouti that is very sweet, and loves to be patted on the back and head. I have a nutmeg that had come around just wonderfully! I "saved" her from a pet store, and the first few weeks she would have NOTHING to do with me, or any movements around her for that matter. Now she's just the sweetest thing, and I hate that I'm going to have to part with her. :( She'll just sit in my hands and "purr" and sniff around and watch things.
Now I do know that pink/red eyed gerbils have more of a tendency to be flighty, just because their vision isn't as good. So while I have an argente golden from a good breeder, and while he's rather well behaved once in my hand, he does have a problem with being picked up, or any unexpected movements around his cage. And of course, there's my dove, who is more or less the same. But again, once in the hand, loves to go outside and sprawl out and sunbathe. :) I honestly don't think coat color has anything to do with temperament. I think it has more to do with the eye color of the gerbil, and their individual personality.
