Yes, gerbils will eat crickets but I disagree about them being anti-stress
therapy.  At 2 am in the morning, an escaped cricket in your bedroom is
likely to drive you crazy.  The problem with crickets is that they are very
prone to escaping.  I give my gerbils mealworms or waxworms as a treat.  The
former are the larvae of a beetle and the latter the larvae of a harmless
moth.  Both are easy to keep contained.
