I first tasted Hecky’s Organic Lechon during the Inquirer Christmas Party. It was yummy. I enjoyed every bite of the skin and meat as though I was devouring vegetable sticks. I called one of the owners of Hecky’s, Carla Tabuena, who said: “Our lechons are organic. We only use free-range native pigs that feed on rice husks, coconut meat and whatever they can forage roaming around the hills, rice paddies and coconut forests of Quezon Province, Marinduque and Bicol.” “We are the only one in the Philippines to use LPG ovens. Through convection, our ovens literally melt the fat away (30-40 percent of pork fat), thus our slogan, ‘It’s the healthier choice,’” she added. Hecky’s Lechon is named after Carla’s late father, Hector C. Tabuena, who came up with the idea of roasting pigs in an oven. “After his passing, we decided to continue my dad’s small-but-very-promising lechon business. And that’s how it all started,” said Carla. “My brother-in-law came to us with a new special formulation and flavor for the lechon. We also learned how to cook the pigs in the ovens, and that’s how we became Cebu-style.” Organic or not, I’ll eat Hecky’s lechon anytime.
