In general, I think we should have a larger discussion about how to
communicate / handle compatibility in the FlightSQL protocol -- I filed
https://github.com/apache/arrow/issues/40424 to discuss the over arching issue,
so hopefully we can focus discussions on this ticket to this particular proposal
