Review Comment:
   Everything I can see in the Parquet spec for `GEOGRAPHY` types ends up being 
an exhaustive enum for edge interpolation:

   GeoArrow also seems exhaustive with the same set of options:
   https://geoarrow.org/extension-types.html#extension-metadata
   
   However, during the POC for this PR it seemed like the general desire was 
for this to more-or-less be a "data tube" and defer validation/correctness of 
the file metadata to users or some higher level library. I'm more than happy to 
increase the rigor here if that's the direction we'd like to move.
