Sure, sure — I've done a bit of changes (and will re-run crossbow to
confirm it all works).
It's not quite so easy that we can pass it as `-e R_DUCKDB_DEV=TRUE`, in the
flags like we do with other things because those only get set in the container
when the tests are being run (or whatever is in the docker (compose) `command`
bit), they aren't set when the container is being built (which is where we need
this flag, since that's when `r_deps.sh` is called).
