Firestore IT test has never run because it was not correctly initialized (https://ci-beam.apache.org/job/beam_PostCommit_Java_DataflowV1/lastCompletedBuild/testReport/), this PR removes Firestore IT test's dependency on two environment variables that are never set, and changes to use fields passed via PipelineOptions.
