Adding integration tests for Iceberg source and sink ______________________________ Reasoning for some dependency bumps **google_cloud_bigdataoss_version** --> 3.0.0 “com.google.cloud.bigdataoss:gcs-connector” is not available at `2.2.16` but is available at `3.0.0` and `hadoop2-2.2.16` Either bump google_cloud_bigdataoss_version —> 3.0.0 or have special case for gcs-connector **hadoop_version** --> 3.4.0 org.apache.hadoop:hadoop-common:2.10.2 doesn’t have [IOStatisticsSource](https://github.com/apache/hadoop/blob/trunk/hadoop-common-project/hadoop-common/src/main/java/org/apache/hadoop/fs/statistics/IOStatisticsSource.java) (introduced in 3.3.1).
