will keep this PR in draft mode and wait for the next arrow-rs bump as https://github.com/apache/arrow-rs/pull/11407 should close the gap for the sort operator, and https://github.com/apache/datafusion/pull/26186 & https://github.com/apache/datafusion/pull/25874 will remove the un-needed cast in the project operator.
