I think the main problem will probably be that postgrey does not record anything unique such as the email's message ID, but only the sender, recipient, and IP address of the sending mail server. So you could see an email from Alice to Bob that has been greylisted, and then maybe 30 minutes later an email from Alice to Bob that passes. But you can't be sure that is the same email, or just a second one that has been sent later.
