I don't think there's any real possibility of hitting the tail or elevator unless you do some dumb things. After all, both you and the aircraft are traveling at the same speed through the air. In general, if you just step off, at first you will go down. As friction with the air slows your forward progress, you'll be left behind by the aircraft, but at first you'll drop like a rock. Just don't jump up. I would think that a human body, hitting one side of the tail section could adversely effect the flight characteristics of the aircraft.
