Bill, You can create multiple signatures but each one has to be associated with a unique email address that you've identified in Settings -> Accounts and Import.
This may not be the best workaround but you could go to that settings page and click on "Add another email address you own" and then create email aliases using plus addressing that you could associate with the different devices you want to send from. E.g., create email addresses such as [email protected], [email protected], etc. Then save those settings and then go back into Settings -> General to add unique signatures for each of those addresses. Of course you'd then have to remember to pick the correct email address when composing your emails in order to get the signature you want. Note: I tested this and it took a minute for the plus addresses I added to Accounts and Import to get listed in the signature drop-down in the General settings.
