The first question is about MacMail, cause it's a function of the program,
not the system, so I don't know your answer.

The second is a little bit as well.  IMAP clients often will only
synchronize a limited amount of mail at a time when you change a large
amount.  Perhaps you didn't leave the MacMail connected long enough for it
to start round two of the synchronization.  Leave that computer on, and
connected for a few hours.  It should try again, and I would imagine it
would get more of the messages then.  You can check by looking at the
online version of the mailbox to see what messages are there.  The phone's
IMAP may be delayed in downloading them too, due to a large number of
messages to sync.
