I usually 

- export the tex part of the image (File->Export and choose a filename ending 
with .tex)
- export the png, eps or pdf part of the image (File->Export file ending e.g. 
in .png, after unchecking the "Print text strings")

You can also indeed use the pdfplot export, or even directly enter the symbols 
as UTF8 (all strings in Gmsh support UTF8 encoding).
