Apache Server Unleashed covers it a little, but just about
all of the Apache books focus on the server. Things like
mod_php and mod_perl are complex enough to warrant their
own books; shoehorning them into an Apache server book would
push it 'way past a thousand pages.
For mod_perl, I can recommend "Writing Apache Modules with
Perl and C"; for mod_php.. well, I can't make a recommendation
on that, not having read any of the books. (Rasmus sat in the
office next to me for several months; who needs a book under
circs like that? ;-) However, all I can find are listed on the
<http://Apache-Server.Com/refs/list/fb/> page.
