There are a lot of ways to do this. I use ssmtp to relay all mail from
one box to my mail server. It's small, compact, and extremely
un-featured. There are about 5 variables that you can set in the
config file. It's meant to be a simple smtp relay (thus the name) to
another system. There is also another program called nullmail that
does the same thing. I find it a lot easier to use something like this
than to try and configure a full-blown MTA like sendmail or exim.
