Yes, the totals right now don't make much sense with multiple
currencies.

The next version will print the currency symbols correctly, at least
in most places. Gnucash doesn't 'know all the currencies', it just
uses the locale information provided by the C libraries to print
the currency symbol.
A drop-down list for currencies would still be useful, though.

In the currency account, you need to set the 'security' value to
be the currency of the other account.

Choose the 'edit' button on the main window when you have the account
selected. As an alternative, select the Account->Edit Account menu
item.
