If you install the version from the Ubuntu repository it will provide a file /usr/share/applications/gnucash.desktop. Copy this file to ~/.local/share/applications and edit the Exec = line to point to your executable. Also edit the Name = field as that is the name that appears when you hover over the launcher so you can make sure it is the right one. Drag the desktop file to the launcher and you should be good to go. You might have to make it executable, I am not sure. In fact to save you installing it I have pasted it below. The icon might not work if you have not installed gnucash normally, so you might need to find an icon somewhere.
