Actually GNC_CONFIG_DIR replaces GNC_DOT_DIR in 2.6 and earlier.
One may change the path in
Gnucash.app/Contents/Resources/etc/gnucash/environment in GnuCash 3 or
Gnucash.app/Contents/MacOS/Gnucash in earlier versions.
