I don't know about other email clients, but Thunderbird seems to have this functionality on a per-account basis. Edit > Account Settings Pick the email address you use for mailing lists [email protected] > Composition and Addressing Check the box for "Automatically quote the original message when replying" Choose drop-down "When quoting... start my reply below the quote." and set signature options as you choose.
