I never thought about it except that I was intentionally holding off on
upgrading GnuCash a few months back, and flatpak upgraded it for me before
I asked.

Based on my reading, it might be a side-effect of installing the flatpak
integration into GNOME.
Specifically the gnome-software-plugin-flatpak package
