To reduce the effort of some categories of receipts, make an invoice for some projects and track them, and let the rest go into the category of "untracked cash I spend" with no invoice or anything.

For the memory problem, write category on receipts as you get them.

For the "no receipt" problem, there's no lower effort method I can think of than 
"receipts go in an envelope".

Another thing I do recently, (as memory sharpness declines with age), is tear off unnecessary parts and fold receipts and put in wallet until occasionally unloading them into envelopes or scanning.

I keep very little new paper for long anymore, just scans. That requires good backups though, and most won't do that level of effort/expense.
