Is there a tutorial or document that walks through how Gnucash is different
from Quicken, accounts versus categories, how to move transactions from
account to account if they were categorized wrong, etc?
Gnucash implements standard double entry bookkeeping.
HOW to "move" (correct) transactions changing the account depends on
whether following formal accounting rules* or not. If not, just (re)open
the transaction in one of the other accounts (always two or more
accounts so always "another") and correct the one that is wrong.

* Remember the origin, ink on paper in bound volumes. So you never
CHANGED an existing transaction. Instead you entered an
offsetting/correcting transaction (with appropriate description). So if
being formal, that's what you do in gnucash.
