Adopt best practice: Don't use the SQL backend; just save your books as files. Don't compress your files: make sure the "Compress Files" checkbox, on the Menu->Edit->Preferences->General dialog, is unchecked, and save the book. You will have a file named <mybook>.gnucash or, if you are older than many on the list, <mybooxk>.xac Make a copy of your file. Open up your file in a simple text editor. Use the Find/Replace functionality of your text editor to Find and Replace the name of the payee. That's it.
