It will transport you to the land of fun, joie de vivre and you can savour the full-flavoured, heart-warming cuisine. Caldo verde 4 medium-sized potatoes 2 medium-sized onions 4-5 leaves of spinach Salt to taste 2 tbsp olive or salad oil ½ tsp pepper powder Peel, wash and quarter potatoes. Peel, wash and quarter onions. Wash and thinly shred spinach leaves. Cook potatoes, onions and cauliflower in six cups of water with salt until tender. Add olive (or salad) oil. Transfer contents to a blender and make a puree. Transfer the puree back to the container and add finely shredded spinach leaves and pepper powder. Cook for 10 minutes. It can also give relief from indigestion and that is what we all want to avoid in the summer. Indigestion along with diarrhoea and flatulence can all be helped with a drink of tender coconut. It also acts as a diuretic. Summertime can mean a mean attack of acidity. Chew on a piece of mature dried coconut as its oil reduces the acid secretion of the stomach and provides relief.
