RESPONSE: My Mum used to make Chicken Cafrael long before Mr Viegas's in O Coqueiro. My Mum's version was the old Indo/Portuguese style with the usual turmeric and other spices version. The spices were forked into the chicken and then it was cooked in a 'sufria' on the top of a 'jikko' (charcoal stove) In those days we did not have an oven. I do believe that Chicken Cafrael in Goa must date back a few hundred years, at the very least. I had the green version Chicken cafrael in Goa for the first time some years ago. I have been to Sarkhels, just 10 minutes drive from my house. I believe he worked in the Taj in India as well as the Bombay Brasserie, in London. He is married to a Chinese origin Indian lady. He also owns a Hakka Chinese Restaurant In Wimbledon Park called Dalchini. The Jumbo prawns in Sarkhels ala Goa style is very good. Visited Nando's just 10 days ago, I was disappointed with the Piri Piri chicken. Some years ago I had been to the Nando's in Kingston and enjoyed it a lot. Perhaps the standard has gone down or it was an off day! Now wait for it........the best BBQ Chicken I have ever tasted in Goa is in Navelim. There is a a man who does this chicken every evening and even people from Margao travel to buy this chicken. It was even better a few years ago when a charcoal fire was used. He now uses a gas fired tandoor and it is just that shade down in my estimation.
