I will have to dig up that information on the exact dates as maybe the some of the Bardezkars who run Goanet and Goacom.com appear to have purged the article on the "Shastikar Poders of Majorda who convinced the Bardezkar to switch from his Kundia Bakor to our Pao" from the Goacom/ Goanet website. That may give you all a temporary advantage in this debate. But it will not last long. Regarding the hiring of the South Goa cooks and butlers to work on British ships, it happened during the early British occupation of Anjediva Island - since they could not hire local kitchen help and labor (due to the strict vegetarian food habits of the natives), they employed the Catholic Goans from the nearby mainland of Salcete, who did not have the dietary restrictions - they found the non vegetarian food and drink habits of the Sashtikar Catholics compatible with theirs- and thus started the large scale employment of Sashtikar cooks, butlers and galley crew on British ships. I will provide you the exact dates when I research the topic in more depth. It is no surprise then that "Pao" and "Cooks and Butlers" (thanks to Nehru) have became synonymous with "Goans" of late. BTW Selma, I am told the sweet "Bol" bread was also a Shastikar innovation that wa later adopted by the Bardezkars - Initially it was the madda-Godd (coconut jaggery) that was used to sweeten the bread - in recent years everyone appears to have switched to refined sugar. Madda Godd was more commonly made in Salcete from the coconut trees of the big bhats there. Best Regards, Dr. Carmo D'Cruz, Ex-Velim, Goa. When did the Bardeshis first learnt recipes for European dishes, and when did the Saxttikars started to work on board the BI and P&O ships and absorb western food habits?
