- the original artisanal Goan bread - is as good as you will find anywhere in 
the world and better than most. It is, without doubt, the best you will find in 
India.

The problem is that you can't find it easily any more, not even in Goa. Was a 
time when there was a baker in each Goan village, and that baker family made 
the quintessential artisanal bread for generations. But their children have 
moved on, are better educated and pursuing more lucrative professions. That 
Goan baker and his artisanal bread is dying away.
Here is a short film on Goan bread that I think you will enjoy. It is preceded

One of the participants in this film is Star Chef Floyd Cardoso, who passed 
away four days ago in New York .  I felt more than a little tearful when I saw 
him in this film.
