Vegetarians allow themselves to eat eggs, cheese, milk, yoghurt, in fact any
by-product derived from animals, they just dont eat the meat of the animal,
also fish is not eaten.
Vegans are do not permit themselves to eat any by-product or any animal
derived food substance nor will they wear clothes or shoes made from animal
by-products (leather, suede, etc).
Jains are Vegans but much more strict than that, they will not kill insects,
there are the strictest Jains who will wear a scarf across their mouths & nose
in case they accidentally swallow an insect, flying or otherwise. Jains will
also not eat anything that grows below ground, yet they get all their protein
needs from the many pulses and of course fruit & vegetables, so iron &
vitamins, minerals & other nutrients can be got from these sources.
I stopped eating red meat for a while & I must say, I did not miss it, there
are so many different foods (especially in Indian cooking), so much so that if
you ate a vegetarian meal at every sitting, you would not have to repeat the
same meal for a year, there are dozens of dozens of different snacks & meals
that can be made using different vegetables & pulses and varying the herbs &
spices.
I signed onto www.about.com some while back & receive daily emails regarding
my interests, which are INDIAN FOOD but also other materials, such as TEEN LIFE
(I am a parent with a teen..............), COMPUTERS (not very IT literate so
this helps), LIFE........... the list is quite large. Also I like to watch
(and have tried making it myself, successfully), Mangulaskitchen on youtube.
Then there are all the websites .............. My wife has taken some
interest in the vegetarian alternative foods lately & I think, after nearly 20
years of gentle persuading, we will be having more vegetarian (& vegan) meals,
but it may take a bit longer to go totally vegetarian. At least I dont take so
much of it on my plate, more of the rice or the breads, more of the lentils or
vegetables and other accompaniments which are 4 usually, plus the meat dish.
And now from 7 days per week, we are down to 3 or 4. By end of the year, I
hope we can make it once per week or not at all.

Not sure what Vegan means versus Vegetarian. Having converted to a modified
form of Vegetarianism, over a year ago, I can personally vouch for the marked
improvement in my health, plus increased energy. Being a Goan catholic, I was
brought up on a diet of all kinds of meat. Meat on the menu every single day
(except Friday as mandated at the time by the Catholic church). Slowly,
gradually, I have given up meat entirely and feel a whole lot better for having
done so. I have heard that GoaNetter Kevin Saldanha is a strong proponent of a
Vegan diet. I wish more people would joing the bandwagon.
