The difference is in the MIME type that your server associates with GPX
files.

The Obviously webserver uses MIME type "text/xml" for files that have a
.gpx extension. The Birdphotos webserver has presumably never heard of
GPX files and uses the default MIME type "text/plain".

The quick fix is to change
  var gpxDoc = request.responseXML;
to
  var gpxDoc = GXml.parse(request.responseText);
