I think that's a moot point. The TOS say "you must not use or display the Content without a corresponding Google map" which I would take to mean a map at the time you use the service. In any case, in your scenario you are wholly reliant on the accuracy of Google's geocoding for what you store in your database. If you did something like John's http://maps.huge.info/pinpointaddress.htm you could display Google's geocode immediately but store the location the **user** supplied to you -- which also gets around Term 10.3 about storing Google's data.
