If you've read the FAQ (under "about us" on the translate page) you'll
know they need large bodies of parallel text. The only organization
that might possibly have that is the Roman Catholic Church - they have
radio broadcasts in multiple languages, including latin, and important
publications such as papal letters are still translated to latin. The
Roman Catholic Church is also the de-facto caretaker of the latin
language, publicizing lists of suggested translations of modern words
and so on.
You could try talking to the Vatican! But sadly, it seems a corpus
isn't enough for google to add a language, there was a Laotian guy
here a while back who wanted to contribute some, he apparently hasn't
heard from them. Probably there is some manual work involved, and I
can't imagine that latin would be prioritized over for instance Lao.
