I think it's a great idea but it's unfortunately too late for this year (deadline for submitting an organization is tomorrow)
We should reopen this subject at the end of this year in order to start a list of idesw of development/contributions that can be done by students. I think also that open source project around GWT should be involved in this process and should be able to their own ideas. We should also take the opportunity of the next gwt.create conference to advertise/promote this initiative.
