Hi Frank, I wrote such a guide in a recent post on the GWT blog: http://googlewebtoolkit.blogspot.com/2010/08/how-to-use-google-plugin-for-eclipse.html. Follow the steps in the last section. Steps 5 and 6 are no longer necessary with the latest Google Plugin for Eclipse.
Also, there is a feature request for a wizard option in GPE to generate a standard maven layout.
