I use Postfix as an MTA on my own servers because it's easy to configure and very stable. I add Courier for POP and IMAP, and Squirrelmail for webmail access. I also add amavis and use it to pipe the mail through spamassassin and clam A/V. Setup including securing takes about two hours (on Debian) and I rarely have to touch it again. This may sound complicated to someone unfamiliar with the terms but I can assure you it's a lot simpler than installing and configuring Exchange. Of course this can all be done quickly and easily using e-smith, but they use QMail instead of Postfix. There are a number of open source groupware products that may be better suited depending on your requirements.
