We use the "bunch of similar boxes" approach. 2 workstations are
identical to the server hardware-wise (although less RAM).
Two years ago I had to move the server's sata RAID array (2 drives) onto
one of these spares when the server's graphics card failed (I initially
thought it was the MB) - this process took about 15 minutes.

Our experience using terminal server 2000 on low to mid range hardware
has been a very happy one.
