GPGMail does not encrypt your mails on your Mac. It can encrypt/sign outgoing mails and if an incoming mail is signed or encrypted for you it can decrypt and verify it. I assume you might want to have a look e.g. at http://en.wikipedia.org/wiki/FileVault in case you want to encrypt all your mails on your machine.
