Good question. Right now it categorizes into "Audio", "Video" and "Other" based on the content types of the files (if the content types are mixed, the content type with the majority of files is preferred). This should in the general case lead to two categories for most normal users. For power users, you can create as many categories as you wish (by simply changing the category on a per-podcast basis). There is actually a category in RSS (although not all podcasts have it, and it might be non-standard) and in gpodder.net we allow tagging of podcasts, so this would be another source of categories.
