I ran into the custos issue when doing something similar with 
versicules/responses. Use \blockcustos to suppress the custos at the end of the 
staff. Note that it will suppress ALL custodes while it is active. I usually so 
something like:

{\blockcustos
\includescore{chants/mychantfile.tex}}

to prevent runaways. If your file has multiple lines of V/R and you want to 
suppress the custodes, on just certain lines, then, as far as I know, you will 
need to break up the files. I know of no way to suppress the custos on a 
particular line of the file. For me, though, it has never been an issue.


As to limiting the length of the staff lines, if I understand your question 
correctly, gregorio tries to space things out as best it can (and usually 
succeeds). However, if the item is very short, it will run the staff lines 
across the page and then run the neums as far as it can. One can argue whether 
it is better to terminate the staff lines early or let them the run across the 
page. The Liber and most other chant books, as best I can recall, usually lets 
them run to the end of the line as does gregorio. Off hand, I do not know of a 
graceful way to terminate the staff lines before the end of the line.

Now one thing you can do (and I sometimes do) is add either a ( ) or add a 
space after the neum notations, la(defg ), to help add a little more space to 
improve things/spread things out in some cases.
