No, the annotation field currently functions as a metadata field, and
doesn't affect the output. The only other field that affects the
output (besides gregoriotex-font) is initial-style.

That would also be un-updated webpage documentation; the actual font
name (defined at the very end of gregoriotex-symbols.tex) is
gregoriosymbolfont. This should be fixed on the site now. The
following should work:

\font\gregoriosymbolfont=gresym at 20pt %or whatever size
