Gregorio basically supports any type of characters, a helpful feature
for this kind of scores will be centering-scheme:english; that centers
the notes around the whole syllable and doesn't try to be smart at
guessing what the vowel is.

My guess is that it's not a problem with LuaLaTeX, but a problem with
the font you use that doesn't contain chinese script. The best thing
will be to get a chinese font and use it with LuaLaTeX, it should be
fairly easy with fontspec, or maybe directly with the XeTeX font syntax.
